Delicious and nutritive bars to take to school or work and have a healthy snack between meals.
2 cups of raw and pre-soaked cashew nuts, or any other nut of your preference. 2/3 cup grated coconut, 1/2 cup of processed dates
1 teaspoon cinnamon 1 tablespoon flaxseeds 1 pinch of salt 1/4 cup (and a little more if you need) of coconut butter.
In the food processor place the nuts, cinnamon, dates, the grated coconut, flaxseeds and the pinch of salt. Mix until finely chopped. Add the coconut oil, mix a little more until you get a sticky mixture. If needed add some more coconut butter. Place the mixture in a paper covered with coconut butter. Arrange mixture in the shape you want, squeezing with your hands until it is well "pressed." Refrigerate for 20 minutes. Take out and cut into individuals squares.
