2 organic grass-fed eggs (these are from my chickens!) 1 spoon of coconut flour 1 spoon of almond flour 1 spoon of kefir or organic sour cream 1 pinch of baking powder (optional) salt optional
Mix your ingredients, until a thick batter remains.
Preheat a large non-stick pan over low-medium heat. Ensure the pan is greased, I use coconut oil. Once hot, Pour of the batter onto the pan. Allow pancakes to cook until the edges go golden, before flipping and repeating.
Once cooked, serve immediately with your favorite organic fruits, or cool completely before refrigerating/freezing for later.
