Set the temperature of the waffle maker to give a nice crisp exterior.
Use the right amount of batter.

Cook: 10 minutes
500 grams mature 100%-hydration sourdough starter. PS: If you do not have a sourdough starter just mix 1/8 teaspoon of bread yeast to the 500 grams of the flour of your choice and 1 cup of water the night before or 8 hours before you want to make the waffles (do not add the eggs until it is time to make the waffles!).
8 hours later:
Add the mix above plus:
2 whole eggs at room temperature
2 tablespoons maple syrup
2 tablespoons coconut oil
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
Combine all of the ingredients, whisking gently until incorporated but being careful not to overmix.
Cook the waffles according to your waffle maker’s instructions.
