Gluten Free Banana Muffins with Coconut Sugar.

I made them last night to serve them for breakfast to my kids today. This way I save time in the morning and can guarantee a nutritious meal to my family.

Ingredients:

1 large banana or two small ones
 

 
3 tablespoons virgin coconut oil
 

 
1 cup organic kefir or natural organic yogurt
 

 
2 organic eggs (these are from my chickens)
 

 
1/2 cup almond flour
 

 
1/2 cup of Teff flour
 

 
1/2 cup buckwheat flour
 

 
Or you can use the flour of your preference I recommend whole flours!
 

 
1 tablespoon baking powder (aluminum free preferably).
 

 
3/4 cup coconut sugar or 5 diced or grated dates

Mix all the ingredients and bring to a preheated oven for about 35 min.
